
Ta-da! I’m domestic! I baked! I’m a baker! (Movie reference anyone??) I made these homemade granola bars thanks to a recipe I found at Mom Most Traveled, and they turned out great. They were easy to make, they’re absolutely delicious, and I’m already looking forward to one with my coffee for breakfast. Here’s the recipe:
3/4 c. packed brown sugar
1/2 c. granulated sugar
3/4 c. vegetable oil
Mix oil & sugars
1 egg
1 tsp. vanilla
Beat in egg and vanilla
1 1/2 c. flour
1 tsp. baking soda
Combine and add to mixture
2 1/2 c. oats
1/2 c. mixed seeds (flax, pumpkin, sesame, sunflower)
1/2 c. chocolate chips
Stir into batter (I actually kneaded this part in by hand. Where’s that Kitchen Aid Stand Mixer when I need it??)
Press into ungreased jelly roll pan and bake for 20 minutes (until golden) at 375F
